A Great Go To Crockpot Recipe

I love my crockpot. I use it at least once a week. If you don't have a crockpot, get one. It is a great investment in your sanity. Tonight I'm taking dinner to a family in the neighborhood who just had their second little boy. I thought I would share my go to recipe that I use for this sort of meal. It is simple to make, and oh so good! My family will also be eating this tonight.

Ingredients:
4-6 chicken breasts, boneless, skinless
Salsa - one container (I prefer Publix brand, mild, but any will do)
One packet of taco seasoning (or homemade seasoning like this one)
Flour tortillas/ chips/taco shells/ or whatever you like to serve tacos on
All the fixins' (shredded cheese, tomato, shredded lettuce, sour cream, salsa, guacomole, etc)
Directions:
Put the chicken breasts, salsa, and taco seasoning in the crock pot and cook until the chicken is done (about 4 hours on low). Take the chicken out and shred it (TIP: a hand held mixer works great for shredding chicken quickly - you can also use 2 forks). Put the chicken back in and cook on low until ready to serve. An hour at least to let all the flavors combine.

Deliver with whatever fixins' you love. This makes a ton, so I almost always have enough to freeze for a future meal. It's always nice to include some fresh baked muffins for breakfast the next day, or just a middle of the night, up with baby snack.
TIP: If you stock up on chicken when it is on sale it can be a healthy and economical staple for meals. I prep and freeze mine using my Foodsaver, but freezer bags work great, too. We have an extra freezer in our garage which allows me to buy in bulk. I recently bought 40 lbs of skinless, boneless chicken from Zaycon foods. This is the second time I've done this and it really is the cheapest way to stock up. I am very happy with the quality of their chicken, too. This year it was $1.89 a lb. They only hold events once or twice a year in my area, so once we use that 40 lbs, I'll go back to looking for grocery store deals. Some of my friends with less freezer space split 40 lbs (that is the smallest amount you can buy).
TIP: This freezes well. I made enough for both of our families to have dinner and had enough extra to freeze for two additional meals. Of course you can use this for more than just tacos. This would be great in any dish where you would add mexican chicken.
