Easy Crockpot Meatloaf

Anyone else working on their meal plan today? Throw this easy recipe into the rotation. It turns out delicious and you can use leftovers to make meatloaf sandwiches for a second meal.

You can use whatever meatloaf recipe you love. This is mine:
1 lb ground beef
1 lb ground pork
1 packet of onion soup mix (Here is a great DIY recipe)
2 tsp egg replacer (I use the egg replacer because my oldest is allergic to eggs, but you could use a real egg)
A few handfuls of Bread crumbs or crushed saltines
Mix it all together and form into a loaf. Here is THE TRICK - line the bottom of your crock pot with bread to soak up the grease. Place the loaf on top. Mix together some ketchup, brown sugar, worstecheshire sauce (I just eyeball this) and brush on top.
Cook on low for 8-10 hours. Serve with some mashed potatoes, green beans, salad, or whatever sides your family loves.

The bread trick also works well with just ground pork. Ground pork makes great gyros.
